Ingredients

  • 1 tbsp olive oil (or peanut or avocado oil), divided
  • 2 tbsp butter, divided (use margarine if allergic to lactose)
  • 1 lb baby potatoes cut into fourths
  • 3 garlic cloves, minced
  • 1 tsp each: fresh thyme, rosemary, and parsley, finely chopped
  • ½ tsp red pepper flakes
  • 1 ¼ lb sirloin steak cut into 1-inch cubes
  • ½ tsp salt
  • Freshly ground black pepper to taste

Instructions

  • Melt one tbsp of butter and ½ tbsp of olive oil in a cast iron skillet (or heavy bottomed skillet) over medium heat.
    Add the potatoes, garlic, herbs, red pepper flakes, salt, and pepper and cook until tender and easily pierced with a fork, stirring frequently, for about 6 minutes. Transfer to a plate and keep warm.
  • Using a slotted spoon, discard any pieces of burnt garlic stuck to the bottom of the skillet. Turn the heat to high, and melt the remaining butter and olive oil.
  • Season the sirloin bites with salt and pepper. Add them to the skillet. Do not move them for two minutes so they sear properly.
  • Turn them until seared on all sides and cooked to your desired level of doneness. Return the potatoes to the skillet.
  • Cook for an additional minute to heat them through. Serve with a side salad and crusty bread.
