Ingredients
- 2 large carrots, chopped
- ½ white onion, chopped
- 1 ½ cups green beans, cut into ½ inch pieces
- 3 celery stalks, chopped
- 1 green bell pepper, chopped
- 1 medium head cabbage, chopped
- 1- 16 oz can whole tomatoes, with juice
- 1 quart V8 juice
- 1- 14 oz can low sodium beef broth
- 1- 1 oz packet dry onion soup mix
- 2 bay leaves
- 1 tsp dried basil
- ½ tsp salt or to taste
- Freshly cracked black pepper to taste
Instructions
- Place all ingredients in a large pot. Bring to a boil, reduce the heat, and simmer for 25-30 minutes.
- Check the seasoning and add more salt, if needed.
