Ingredients

  • 2 large carrots, chopped
  • ½ white onion, chopped
  • 1 ½ cups green beans, cut into ½ inch pieces
  • 3 celery stalks, chopped
  • 1 green bell pepper, chopped
  • 1 medium head cabbage, chopped
  • 1- 16 oz can whole tomatoes, with juice
  • 1 quart V8 juice
  • 1- 14 oz can low sodium beef broth
  • 1- 1 oz packet dry onion soup mix
  • 2 bay leaves
  • 1 tsp dried basil
  • ½ tsp salt or to taste
  • Freshly cracked black pepper to taste

Instructions

  • Place all ingredients in a large pot. Bring to a boil, reduce the heat, and simmer for 25-30 minutes.
  • Check the seasoning and add more salt, if needed.
