Ingredients

  • 4 tsp olive oil, divided
  • 4 flounder filets
  • ½ tsp salt
  • Freshly ground black pepper to tast
  • cup grated Parmesan cheese
  • ¼ cup Italian-style seasoned breadcrumbs
  • 3 garlic cloves, minced
  • 2 tbsp parsley, freshly chopped
  • 1 lemon, juiced and zested

Instructions

  • Brush a baking sheet with 1 tsp olive oil, and preheat the oven to 350 F.
  • Season the filets with salt and pepper on both sides
  • Combine the breadcrumbs, minced garlic, grated Parmesan, lemon zest, and chopped parsley in a shallow bowl.
  • Cover the filets on both sides with the breadcrumb mixture by pressing them into it.
  • Place the fish filets on the prepared baking sheet and drizzle the remaining 3 tsp over the filets.
  • Squeeze the lemon juice over them and bake for 20 minutes or until completely cooked.
