Ingredients
- 4 tsp olive oil, divided
- 4 flounder filets
- ½ tsp salt
- Freshly ground black pepper to tast
- ⅓ cup grated Parmesan cheese
- ¼ cup Italian-style seasoned breadcrumbs
- 3 garlic cloves, minced
- 2 tbsp parsley, freshly chopped
- 1 lemon, juiced and zested
Instructions
- Brush a baking sheet with 1 tsp olive oil, and preheat the oven to 350 F.
- Season the filets with salt and pepper on both sides
- Combine the breadcrumbs, minced garlic, grated Parmesan, lemon zest, and chopped parsley in a shallow bowl.
- Cover the filets on both sides with the breadcrumb mixture by pressing them into it.
- Place the fish filets on the prepared baking sheet and drizzle the remaining 3 tsp over the filets.
- Squeeze the lemon juice over them and bake for 20 minutes or until completely cooked.
