- 4 tsp olive oil, divided
- 4 flounder filets
- ½ tsp salt
- Freshly ground black pepper to tast
- ⅓ cup grated Parmesan cheese
- ¼ cup Italian-style seasoned breadcrumbs
- 3 garlic cloves, minced
- 2 tbsp parsley, freshly chopped
- 1 lemon, juiced and zested
Brush a baking sheet with 1 tsp olive oil, and preheat the oven to 350 F.
Season the filets with salt and pepper on both sides
Combine the breadcrumbs, minced garlic, grated Parmesan, lemon zest, and chopped parsley in a shallow bowl.
Cover the filets on both sides with the breadcrumb mixture by pressing them into it.
Place the fish filets on the prepared baking sheet and drizzle the remaining 3 tsp over the filets.
Squeeze the lemon juice over them and bake for 20 minutes or until completely cooked.
