Equipment

Ingredients

  • cup lite mayonnaise (or Greek yogurt)
  • ½ tsp mustard powder
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp paprika
  • Salt and pepper to taste
  • 4 thin-sliced boneless, skinless chicken breasts
  • ½ cup panko breadcrumbs
  • ¾ cup freshly grated parmesan cheese

Instructions

  • Preheat the air fryer to 390 F.
  • In a small bowl, mix the mayo, mustard powder, garlic powder, paprika, dried oregano, salt, and pepper.
  • Make the breading: in a shallow dish combine the Panko breadcrumbs and parmesan cheese.
  • Brush the chicken breasts on both sides with the mayo mixture.
  • Coat the chicken breasts on both sides with the breading mixture. Shake off the excess.
  • Air fry the chicken breasts for 10-12 minutes, flipping halfway through the cooking time.
