- 20 oz frozen spinach (steam-in-bag)
- 1 tbsp butter
- ¼ cup onion, chopped
- 2 garlic cloves, minced
- ¼ cup white wine
- ½ cup 2% milk
- ½ cup heavy cream
- 6 oz cream cheese, room temperature
- ⅛ tsp ground nutmeg
- ½ tsp red pepper flakes (or to taste)
- ½ cup Parmesan cheese, grated
- ½ tsp salt or to taste
- Freshly cracked black pepper to taste
Steam the spinach in the microwave according to the package instructions, wait for it to cool down, and squeeze as much water out of it as possible. Set aside.
Heat a large skillet over medium-high heat and melt the butter. Saute the onions and garlic until fragrant, about 2. Pour in the white wine and simmer until reduced by half.
Mix in the milk, heavy cream, cream cheese, nutmeg, red pepper flakes, Parmesan cheese, salt, pepper, and cooked spinach until well combined. Serve hot.
- For easier mixing, make sure the cream cheese is at room temperature.
- If your cream cheese is not at room temperature, microwave it for 20 seconds or until softened. Remember to remove the foil before placing it in the microwave.
- After mixing all the ingredients, check the seasoning and add more salt if needed.
