- ½ tbsp olive oil
- ½ cup onion, chopped
- 1 lb lean ground turkey
- 3 garlic cloves, minced
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- ½ tsp salt
- Freshly ground pepper to taste
- ½ cup tomato sauce
- ½ cup chicken broth
- 16 romaine lettuce leaves, washed and thoroughly dried
Heat a large skillet over medium-high heat and heat the olive oil. Brown the ground turkey with the onions and garlic until fully cooked. Season with salt and pepper.
Add the spices, tomato sauce, and chicken broth, and simmer until almost all the liquid has evaporated.
Stack two lettuce leaves together and fill with about 3 tbsp of meat mixture. Serve immediately with your favorite toppings on the side.
