Equipment

Ingredients

  • ½ cup butter, softened
  • 1 cup light brown sugar, packed
  • 2 eggs, room temperature
  • 2 large bananas (about 1 ¼ cup), mashed
  • ½ cup chopped walnuts
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • Pinch of salt

Instructions

  • Grease and flour a 9x5-inch loaf pan and preheat the oven to 350 F.
  • In a medium bowl, cream together the butter and brown sugar using a whisk, until light and fluffy. It is important the butter be at room temperature.
  • Whisk in the eggs until well combined.
  • Fold in the mashed bananas, vanilla extract, and chopped walnuts until combined.
  • Mix in the flour, baking soda, cinnamon, and pinch of salt using a wooden spoon or rubber spatula just until combined. Do not overmix the batter.
  • Pour the batter in the prepared loaf pan and bake for 50-60 mins or until a toothpick inserted in the middle comes out clean.
  • Let the bread cool in the pan for about 5 minutes, then unmold and transfer to a cooling rack to cool down completely.
