Equipment

Ingredients

For the fish:

  • 1 tbsp avocado or olive oil
  • 1 tbsp lime juice
  • 1 tbsp parsley, finely chopped
  • 2 garlic cloves, minced
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • ¼ tsp salt
  • Freshly ground black pepper to taste
  • 2 tilapia filets

Salsa:

  • 1 large mango, peeled, pitted, and diced
  • cup red bell pepper, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 2 tbsp red onion, minced
  • 2 tbsp cilantro, freshly chopped
  • Juice of one lime
  • ½ tsp salt
  • Freshly ground black pepper to taste

Instructions

  • Make the salsa by placing the mango, red bell pepper, jalapeno, red onion, lime juice, cilantro, salt, and pepper in a salad bowl. Toss to combine and chill in the fridge while making the fish.
  • Make the marinade: whisk together the oil, lemon juice, parsley, garlic, oregano, basil, red pepper flakes, salt, and pepper in a shallow dish. Add the tilapia filets, toss to coat, cover with plastic wrap, and refrigerate for 30 mins.
  • Heat a grill or grill pan over medium-high heat and grill the filets for 3 to 4 minutes on each side, or until fully cooked. Serve with mango salsa on top.
