Ingredients

  • 2 lb sweet potatoes, peeled and cut into even-sized matchsticks
  • 2 tbsp avocado or olive oil
  • 1 tsp paprika
  • 1 tsp mustard powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp parsley flakes
  • 1 tsp salt
  • Freshly cracked black pepper to taste
  • 1 tbsp cornstarch

Instructions

  • Peel and cut the sweet potatoes into matchsticks and soak them in cold water for 30 mins. Drain and thoroughly pat them dry.
  • In a large bowl, place the sweet potato matchsticks, oil, herbs, spices, salt, pepper, and cornstarch, and toss until well combined.
  • Place the sweet potato fries on a rack over a baking sheet and bake for 25 mins or until crispy and slightly charred on the edges. Serve with your favorite dipping sauce.
