- 2 lb sweet potatoes, peeled and cut into even-sized matchsticks
- 2 tbsp avocado or olive oil
- 1 tsp paprika
- 1 tsp mustard powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp parsley flakes
- 1 tsp salt
- Freshly cracked black pepper to taste
- 1 tbsp cornstarch
Peel and cut the sweet potatoes into matchsticks and soak them in cold water for 30 mins. Drain and thoroughly pat them dry.
In a large bowl, place the sweet potato matchsticks, oil, herbs, spices, salt, pepper, and cornstarch, and toss until well combined.
Place the sweet potato fries on a rack over a baking sheet and bake for 25 mins or until crispy and slightly charred on the edges. Serve with your favorite dipping sauce.
