Ingredients

  • 1 large ripe banana
  • 1 ½ cups rolled oats
  • ½ cup chocolate chips
  • cup almond butter
  • ¼ cup honey
  • 2 tbsp flaxseed meal
  • ½ tsp ground cinnamon
  • ½ tsp vanilla extract
  • pinch of salt

Instructions

  • In a bowl, peel and mash the banana, using a fork, until creamy and no chunks remain.
  • Add the rolled oats, chocolate chips, almond butter, honey, flaxseed meal, cinnamon, vanilla extract, and a pinch of salt. Mix using a fork until all ingredients are well combined. The mixture will be sticky. Let it firm in the refrigerator for at least 1 hour.
  • Remove from the refrigerator. Grease your hands with melted coconut oil and roll into 1-inch balls. Place on a plate or on a baking sheet lined with parchment paper. Place in the refrigerator until ready to serve. Enjoy!
